Martin Burge Launches New Seafood Restaurant
Michelin-starred chef Martin Burge is launching a new seafood-inspired restaurant in the heart of the Cotswolds.
The former Whatley Manor chef is launching Hook on March 6 at The Fish hotel on the 400-acre Farncombe Estate in Broadway.
Offering gourmet dining with a twist, Hook will be a luxurious celebration of responsibly sourced seafood with a menu featuring the finest, freshest fish. Signature dishes include Porthilly rock oysters, poached blue chip salmon, whole baked sea bass and lobster thermidor.
The all-day restaurant will welcome both hotel guests and non-residents, with outdoor seating on the terrace for alfresco dining in the summer months.
Combining the sophistication and refinement synonymous with Burge’s gastronomy, and the warmth and welcoming rusticity that has made The Fish a firm favourite over the last five years, the new-look restaurant will feature an open kitchen, 360-fire and cosy corners.
Honouring the owners’ Danish heritage, the hygge design will fuse neutral interiors, cosy textiles and clean lines.
Over the course of the next six months, The Fish will add a number of quirky accommodation options to its existing collection. Kicking off with the six-bedroom, family-friendly Farmhouse, this former private home styled by owner and design director Nette Reynolds is now available for exclusive use for groups of up to 15 guests.
In the spring, ten new bedrooms will be added to the Coach House, an original coaching inn with views over the Vale of Evesham. Three new treehouses will follow in May with space for up to five guests, ideal for families or friends looking to share.
