Innovative Cuban Chef Launches Pop-up Restaurant in The Cotswolds
Renowned Cuban-born chef Ruben Leon-Acosta is launching a series of pop-up dining events across the Cotswolds, under the brand name Nomada.
The first of these new pop-ups takes place within Miserden Estate’s own café, housed within a beautiful, converted greenhouse near Stroud in Gloucestershire.
Leon-Acosta will showcase his delicious, innovative range of exciting Thai dishes with a modern twist made using seasonal local produce wherever possible.
On arrival, guests will be welcomed with a Projito, a Prosecco Mojito with lemon grass, followed by a starter of Thai consommé with prawn and lemongrass relish, a Thai red curry with chicken, jasmine rice and a Monks offering, and for dessert, rice caramel with sesame seeds and peanuts.
Widely travelled, Leon-Acosta has worked as a professional chef for almost 20 years. His passion for cooking is very much influenced by his native Cuba, as well as his travels to Thailand, Vietnam, Morocco and France, and later working at some of London’s most renowned restaurants, including Ottolenghi and Fifteen.
He says: “For every pop-up Nomada event, I want to ensure that both those in the kitchen and the food lovers coming for the experience will be involved in a joint adventure into the world of cooking by drawing on inspiration and influences that crosses borders and experiences.”
The Nomada Pop-Up dining venture will include Japanese, Korean and Thai menu nights served at beautiful and eclectic locations around the Cotswolds.
The first event takes place on Friday, February 9 and Saturday, February 10. The three-course Thai meal and welcome drink costs £35 per person and there is a BYO wine policy.
