Will Holland Launching The Tasting Room at Jersey’s Atlantic Hotel
Jersey’s Atlantic Hotel has announced the launch of The Tasting Room by executive chef Will Holland.
Building on the long-established reputation of the hotel’s Ocean Restaurant, the Tasting Room will exclusively showcase tasting menus by Holland, a dining experience which he describes as ‘a modern adventure in food and wine’.
Hosting just 14 covers, guests in the intimate space will be treated to a seven-course tasting menu, offering an extraordinary celebration of the very best local ingredients and finest produce sourced from Jersey and its waters.
Paired wine flights specially selected by the hotel’s new food and beverage manager, Jaroslav Sedlacek will provide the perfect accompaniment to this carefully crafted new dining experience.
Dishes on the menu include: Jersey scallop carpaccio, avocado, passion fruit and shizo; Retired Jersey dairy cow tartare, bone marrow, egg yolk, watercress; Jersey turbot fillet, yoghurt, coriander, teriyaki, and confit Jersey pork neck, squid, celeriac, preserved lemon.
Joining The Atlantic in late 2017, Holland brings a new era of dining to the hotel. Having first worked in Michelin-starred restaurants at the age of 18, he was awarded a Michelin star before he was 30 and has been recognised by The Good Food Guide as one of its predicted 10 most influential chefs in the next decade.

The Tasting Room opens on March 21 and will be available for evening sittings from Tuesday to Saturday.
