The Chefs’ Forum is delighted to announce the donation of a number of Bradley Smokers to all its member colleges throughout the South West and South East.
Donated by the UK importer and distributor for Bradley Smokers, Grakka Ltd, this activity is enabling future chefs the chance to understand the techniques of smoking food.
Students from Cornwall College, City College Plymouth, City of Bristol College, Bournemouth & Poole College and most recently East Kent College are all benefiting right now from the donations.
Now famous in over thirty countries The Bradley Smoker is used by many professional chefs including Nathan Outlaw, Mark Hix and they are also installed in Raymond Blanc’s Brasserie Blanc restaurants across the UK. The smokers use natural draft smoke designed to make smoking food a simple, predictable, and repeatable process with perfect results on every occasion.
Christophe Baffos, Head of Hospitality and Tourism at Bournemouth and Poole College stated: “Our students now have the opportunity to acquire skills in this extremely current method of cooking. We look forward to tasting the fantastic results and showcasing new dishes implementing these techniques in The Escoffier restaurant!”
