Whilst in high school I was offered some kitchen work by my fathers friend who owned a restaurant in a small North Wales town, I knew within a few weeks that this was going to be the career for me!
I spent a couple of years learning the basics before going on to Catering College and then securing a trainee chef’s position at the prestigious St Davids Park Hotel where I climbed my way up to Sous Chef and gained 2 rosettes under the guidance of Graham Tinsley MBE.
Having spent time in some great hotels including Whittlebury Hall in Towcester, Thornton Hall on the Wirral as Executive Chef where the restaurant managed to gain multiple awards and eventually went on to gain 3 rosettes.
Currently Executive Chef for Hilton based in Manchester and recently launched a brand new restaurant concept called Store Street Exchange which is doing really well and I’m really pleased with how the team here have adapted and launched a great product which our guests love.
I have been in the industry for nearly 25 years and still have the hunger and energy that gripped me all those years ago.
