A multi ethnic trained chef, Spencer began his classical training at Thanet College (now East Kent College) before heading to London and working his way up the ladder gaining the knowledge and experience needed.
A winner of the Nestle Toque D’or whilst at college, he has gone on to cook for numerous industry heads, HNW individuals and famous faces.
Starting as a commis saucier at The Ritz Club at the Ritz Hotel, the journey took him to a number of the high end casinos and clubs within Mayfair and the West End to include the London Iconic USA steakhouse group ‘The Palm’ as executive chef and culminating in being the opening and executive chef of Park Lane Club on London’s famous Park Lane.
After 23 years behind the stove and service pass running clubs and restaurants, the journey has led to him starting West Hospitality Consultants. A ‘one stop’ hospitality company for food outlets and restaurants where he is also the managing director.
