I began my career in my father’s bakery and pastry shop in Sicily, where I learned the basics of baking and the traditions of Sicilian pastry. After a brief and unsuccessful attempt at studying Aerospace Engineering, I realised my true passion lay elsewhere and enrolled at the Boscolo Etoile Academy to study modern pastry.
After finishing school, I worked for six months at Le Calandre with Chef Massimiliano Alajmo as an apprentice, before leaving Italy to join the Armani Hotel in Dubai, where I spent three years refining my craft.
In 2016, I moved to London and worked in several environments, including Chef Eneko Atxa’s restaurant at One Aldwych Hotel, and the Bulgari Hotel. Shortly after the pandemic, I joined the pre-opening team at Eataly London as Head Pastry Chef, before taking on my current role at as Executive Pasty Chef at Shangri-La at The Shard three years ago.
