My expertise and knowledge stems from working in 5* hotels and Michelin* restaurants in the UK and throughout Europe. With chefs like Micheal Trosigros, Micheal Bras, Gordon Ramsay, Marco Pierre White, David Nicholls, Harry Lomas, Michael Wignall, Heston Blumenthal and Daniel Boloud. Such establishments constantly provided challenges on creating something different for a special occasion, which cannot be found on any menu.
Over the years I have mentored many chefs in internationally and in UK competitions such as: Hotelympia, World Chef Olympics in Luxembourg and Erfurt Culinary show.
I have assisted in judging exams in Le Cordon Blue in London and Paris. I have also graduate form this school with Grand Diploma in Cuisine and Patisserie.
At present I’m owner of Crane Patisserie Ltd base in Hampshire my company specialised in creating dessert , chocolate and patisserie options for hotels and hospitality venues across UK and mainland Europe.
