I trained at St Austell College and decided to pursue my career in Cornwall. I worked in several restaurants and hotels, most notable was The Wellhouse, St Keyne where I worked my way through the ranks and ultimately became Head Chef and retained the 3 rosettes that it had held for over twenty years.
I then moved to the Isles of Scilly working for Tresco Estates as Head Chef at Hell Bay Hotel, gaining 3 rosettes for this establishment, this led to me becoming the Development Chef for Tresco Estates and I looked after three restaurants on the island.
After ten years on the Isles of Scilly I felt it was time to return to the mainland and Una St Ives seemed like the challenge that I was looking for so accepted the Head Chef position in March 2017. At Una we have launched a brand new restaurant that is proving to be very successful and have great plans for the future.
