Fred took over as Head Chef at Coast just as the Covid pandemic started in 2020, relocating to Pembrokeshire just a week prior to the first lockdown. Arriving from Michelin-starred restaurant The Clock House, this gave Fred time to explore his new surroundings.
He hiked much of the coastline, learned the best places to forage, and grew his knowledge of the local area to truly understand its sense of place, ready for reopening.
Since then, he’s taken Coast on an exciting journey, overseeing the full interior refurbishment of the restaurant and has recently been awarded 3 AA rosettes and Taste of Pembrokeshire award. Fred has a love for the big screen, so enjoys watching all sorts of movies. And living so close to the sea, he has been inspired and rather than just walking the Coast, he is keen to take up kayaking next spring.
