Originally from Ayrshire in Scotland I moved to Jersey to follow my dream of working in a Michelin-started restaurant. Working in Bohemia restaurant under Shaun Rankin for five years and becoming Sous Chef.
I then moved to the two Michelin-starred hotel, Whatley Manor in The Cotswolds spending two years there and becoming Junior Sous Chef. I went travelling to Australia and held a job at one of The Worlds Top 50 Restaurants, Quay in Sydney.
On returning to the UK I took my first Head Chef position at the age of 28 at the Tudor Room in Great Fosters Hotel (Surrey). One year later we were awarded a Michelin star and included in la list top 1000 followed by four AA rosettes. 2019 saw me move to the Grove of Narberth (Wales) where I have become Executive Chef. This year we have been awarded Welsh Hotel of the Year along with a five star rating.
