I am Deri Reed, award winning Welsh chef and proud founder of The Warren. Running a restaurant like The Warren has always been my dream. In 2016 this dream became a reality when I ran a crowd-fund campaign to open my restaurant in my hometown of Carmarthen. I am the proud winner of Chef of the Year at the Food Made Good Award and delighted that we were runners-up at The Observer Best Ethical Food Project – a cause very close to my heart.

The whole team was over the moon to have been recognised by such a prestigious national publication such as The Good Food Guide.

Career

2009
CAFÉ PARIDISO
Café Paridiso is well known internationally as a ground-breaking vegetarian experience. Working there gave me the opportunity to learn about cooking restaurant style, high-end vegetarian food.

2010
HUGH FEARNLEY-WHITTINGSTALL
Working with Hugh at River Cottage was a once in a lifetime experience, I learnt so much about growing produce, creating recipes and running a restaurant.

2011
THE ETHICAL CHEF
I started cooking at local markets and had a stall at Riverside market in Cardiff. It was hard work, but I met so many amazing people doing this, and it confirmed my love of being a chef!

2014
GLASTONBURY
Who doesn’t dream of playing Glastonbury? I got to experience it when The Ethical Chef brought our menu to the masses and we sold out over the four-day event!

2016-present
THE WARREN
Seeing my dream of opening a restaurant become a reality was incredible and definitely worth all of the hard work. The restaurant is going from strength to strength and I’m so excited to see what the future holds.
