Heading up the Kitchens of Cowley Manor is renowned Chef, David Kelman. A Welshman born & bred David grew up in the Welsh valleys; which he credits with inspiring him to pursue a career as a Chef, being surrounded by so much glorious local produce. He honed his talent and ambition at Bodysgallen Hall, known as the ‘Best Hotel in North Wales’, making the move the Cotswolds with his family in 2005 to pursue excellence in cookery and find progressively more creative and dynamic kitchens to work at and call home.
David’s dishes have been delighting diners at Cowley since he joined, with favourites including Creedy Carver Duck Breast, with fondant potato, gem lettuce and baby vegetables and his tangy and sweet Lemon Posset. Guests and diners can expect fresh and contemporary updates to classic recipes and dishes, perfectly complimenting the ethos and design of Cowley Manor itself. You may well see David around the hotel, chatting to guests or out and about in the garden fetching herbs and finding inspiration for his next dish.
