Darryl has an extraordinary and inspiring story. After losing his mother and his brother while growing up in the Midlands, Darryl drifted into teenage delinquency. Meeting his wife Hannah turned his life around.

They fell in love with Cornwall and settled down in the county but struggled to raise a family on their factory wages. Darryl found work as a chef in a beachside café in Newquay and that put him on the path to becoming one of the country’s top Pâtissier’s.

“Pastry is something in my blood and comes naturally, although I only found this out after being a kitchen porter at the Tredragon hotel in Mawgan Porth, Cornwall when is was promoted to 3rd chef as a junior pastry chef. And it was something I found that I was good at. I’m a self-taught pastry chef, although I did a day release course for my level 1&2 St Austell college and my level 3 Larder and Patisserie at Camborne College”

He has been grateful enough to have worked at some of the best places in the country, like the Headland Hotel, The Lygon Arms and The Welcombe Hotel to name but a few.

For the last few years Darryl has been dishing up virtuoso desserts at Resort World in Birmingham where he heads a team of six pastry chefs. He has recently mentored his pastry commis chef, Nicole McKenzie, who recently won the title of UK’s Junior chocolate master – a big success for Resort World and for Birmingham.
