Global Knives Partner with The Roux Scholarship to Celebrate 30 years!
To celebrate its 30th anniversary, leading UK knife brand, Global, has joined forces with The Roux Scholarship to create a series of 12 films featuring Scholars creating exclusive recipes using Global Knives.
The iconic knife brand wanted to honour the relationship that exists between top chefs and what is arguably their most important tool of all – their knives. Having been a main sponsor of The Roux Scholarship since its inception in 1984, Global has been continually impressed and excited by the quality of the Chefs entering the competition and by the outstanding chefs who go on to win each year. Similarly, after using Global Knives during the competition many of the Scholars have continued to use them in their kitchens after the event. To celebrate this special relationship, 12 Scholars were invited to create a dish using a Global Knife of their choice. The chefs were then filmed creating these dishes.
A film of each recipe and accompanying interview will be featured on the Global Knives website throughout 2015.
January’s recipe is by Andrew Fairlie, the first ever Roux Scholar who won the scholarship in 1984 – The competition’s first year. Andrew is now executive chef at the Andrew Fairlie Restaurant within the Glenagles Hotel in Auchterader. Andrew chef in Scotland to hold two Michelin stars. Andrea chose to create a cured mackerel dish using the Global G-21 filleting knife, and talks about how a sharp knife is essential to creating a perfect dish. He also has very useful advice for any chef thinking about entering the Roux Scholarship and talks about the positive impact it has had on his own career.
Each Scholar’s film will be released on the first of the month. February will see a recipe by Matthew Tomkinson, Roux Scholarship winner 2005 and now head chef at The Montagu Arms in the New Forest.
