After leaving school in 2002 Joshua trained on the job gaining experience working in various Bristol restaurants including Aqua, Fish Works, Hotel Du Vin and The Pump House however never settled as he knew from the moment he started cooking he wanted to learn his own way so cooked as much as possible and read loads of cook books! He took a Sous Chef position at The Dining Rooms followed by stint as Sous Chef at the Michelin star Wilks Restaurant.
At the age of 24 Joshua gained his first Head Chef position at The Lock Keeper in Portishead before taking the helm in the kitchen at The Steam Crane when it launched. He spent 2 years as Head Chef at the Victoria Park, here he had a listing in the Michelin guide and won the title of Bristol’s best Sunday roast.
Joshua is currently Head Chef at The Limehouse in Clevedon where they gained a TripAdvisor Certificate of Excellence and awaiting the results of a recent Michelin visit.
He prides himself in sourcing the best quality produce, including rare breed meats.
