As Sous Chef you’ll be responsible for the comprehensive management of all aspects of the kitchen operation and work towards building a team infrastructure which profitably delivers High quality food products on a consistent basis.

This is a full-time, permanent position working 40+ hours per week. Including Days, Nights & Weekends.

The salary for this role is negotiable, and will be dependent upon skills and experience.

Duties & Responsibilities

Delivering consistently high-quality food, monitoring stock rotation and ordering to ensure that items not meeting these standards are not accepted or served.

To have a hands on role in food preparation if and when required, making sure all dishes are prepared according to the SOP’s and maintaining health and safety practices.

Responsible for the daily running of the Kitchen and the management of the brigade. This will include managing work performance and development of the other staff as well as absence management to ensure the Kitchen brigade is fully supported.

To monitor and train junior cooks to ensure consistent quality in the daily preparation and keep up to date with the new products, recipes and preparation techniques, and food safety procedures.

Ensure all HACCP and hygiene documentation is kept up to date and correctly filed, reporting any discrepancies or noncompliance to the head chef.

Maintain awareness of kitchen expenditure and wastage to ensure all kitchen finances are kept in line with the targets set for that year, reporting any suggested cost saving to the Head Chef for consideration.

Skills & Experience

  • Experienced as a Sous Chef.
  • 706/1 & 2 or equivalent.
  • Full understanding of UK food production laws & requirements.
  • Level 2 food hygiene or higher.
  • To be able to demonstrate leadership skills.
  • Hotel or large scale catering background desirable but not essential
  • Wage negotiable depending on experience. Documented evidence of eligibility will be required as part of the recruitment process and you must be eligible to live and work in the UK. (Asylum & Immigration Act 1996).
