We are looking for a Head Chef to oversee the kitchen of this stunning property.
Requirements
- Work to a wage percentage of 23%
- Food COS budget 2012/2013 28%
- Number in brigade/positions:8 full time chefs (Head Chef, Sous Chef, 3 CDP, 2 Commis, 1 Breakfast Chef), 2 casual chefs – hourly paid (CDP/Sous Level), 4 kitchen porters – hourly paid
- Minimum 2 AA rosette standard experience
- Able to cost menus correctly
- Strong communication with suppliers and checking prices and quality daily.
- High hygiene, cleanliness and HACCP standards
- 2 restaurants which operates 2 different menus in each (e.g. TDH & ALC). The Arboretum is fine dining and Acorns is Brasserie.
- Able to work in a high pressure environment.
- Salary £30-32k per annum
